Berry Bread Pudding

Berry Bread Pudding

1L Whipping Cream

675g White Bread

4 Eggs

400g Sugar

1 cup Blueberries

1 cup, Dried Cranberries

1 oz Brandy

1 tsp Vanilla

Cooking Instruction

  1. Cut bread into cubes and place in a large mixing bowl.
  2. In a mixer combine cream, eggs, sugar, vanilla and mix well.
  3. Combine bread and cream mixture.
  4. In a small pot heat cranberry, blueberry, brandy and vanilla.
  5. Line a half insert hotel pan with parchment paper, place half of the bread mixture in a layer, add the berries and another layer of bread.
  6. Baked in the oven at 350°F for approx. 40-45 minutes.
