Caramel Cream

Caramel Cream


60 mL (¼ cup) Water

250 mL (1 cup) Sugar

Juice of 1 Lemon and Zest of ½ Lemon

Juice of 1 Orange and Zest of ½ Orange

30 mL (2 tbsp) Cognac

30 mL (2 tbsp) Grand Marnier

125 mL (½ cup) Cream

Cooking Instruction

In a saucepan over medium-high heat, bring water and sugar to a boil. Cook until golden. Quickly add juice and zest. DO NOT stir with a metal spoon. Melt, stirring with a wooden spoon. Add cognac and Grand Marnier. Add cream, stirring.
Cook for 1 or 2 minutes to thicken. Cool in a bowl in refrigerator. Serve spooned over cake or ice cream, or as a dip for cut-up fruit.
