French Toast with Creamy Coffee Fudge Sauce

French Toast With Creamy Coffee Fudge Sauce

Ingredients
Creamy Coffee Fudge Sauce
250 mL (1 cup) 33% whipping cream
500 mL (2 cups) brown sugar
60 mL (¼ cup) sugar
30 mL (2 tbsp) butter
75 mL (½ cup) strong coffee
French Toast
250 mL (1 cup) 10% half-and-half cream
4 eggs
60 mL (¼ cup) sugar
30 mL (2 tbsp) butter
8 slices bread
250 mL (1 cup) raspberries
fresh mint (to taste) finely snipped
Cooking Instructions
To make sauce, in a saucepan, place brown sugar, sugar, cooking cream and butter. Simmer for 5 minutes. Add coffee and simmer for an additional minute. Remove from heat. To make French toast, beat together table cream, eggs and sugar in a shallow dish. In a frying pan, melt butter. Quickly dip each bread slice in cream and egg mixture then place in hot frying pan. Cook until golden on both sides. Place French toast on 4 plates and top with raspberries and mint. Drizzle with Coffee Fudge Sauce. The sauce will keep in the refrigerator and thicken like caramel.
