60 mL (4 tbsp) Butter
1 finely chopped Shallots
125 mL (½ cup) thinly sliced Mushrooms
6 Star Anise
250 mL (1 cup) White Wine
250 mL (1 cup) Cream
250 mL (1 cup) Chicken Broth
30 mL (2 tbsp) Flour
Salt
Freshly ground Pepper
In a frying pan over medium heat, melt half of butter and cook shallot, mushrooms and star anise. Add white wine and reduce by half. Add cream and chicken broth. Bring to a boil. Add remaining butter, and flour, stirring constantly with a whip. Cook sauce, stirring constantly, until thick.
Simmer for 2 minutes. Salt and pepper, to taste. Ladle hot sauce over your choice of pasta.
