Spring is well underway here in BC which means local asparagus can now be found in the stores and at the markets. This herbaceous, perennial plant (thanks Wikipedia!) can be grilled, roasted, steamed, barbecued, and even baked. Or, cooked into an omelette, which is one of our favourite ways to enjoy it.
