Maple Pecan Citrus Yam Bake
Yasmin Hall, winner of the root vegetable category in the 'Fall Four Recipe Contest'
4 large washed yams
1/4 cup fresh squeezed orange juice
2 tsp fresh orange zest
3 tbsp butter
1/2 cup pure maple syrup
1 cup chopped pecans
1 tsp allspice
Heat oven to 400F Bake yams, skin on, for approx 1 hour or until cooked and soft in centers
Remove and throw away skins, mash flesh with butter, orange juice, and zest until smooth
Place in medium casserole dish, using a spatula smooth the top.
Mix maple syrup, pecans and allspice in a small dish until combined and pour over mashed yams.
Bake for 20 minutes at 350F. Enjoy!
