Freezer Apricot Jam

Freezer Apricot Jam

A brilliant accompaniment to multigrain or whole-wheat toast.

Ingredients:

  • 3 cups (750 ml) mashed apricots
  • 1 tablespoon (15 ml) lemon juice
  • 1/8 teaspoon (0.6 ml) grated lemon rind
  • 5 cups (1.25 L) granulated sugar
  • half bottle liquid Certo

Directions:

  1. Mix apricots, lemon juice and rind. Add sugar, stir 5 minutes until sugar dissolves. Let stand 20 minutes.
  2. Stir in pectin. Ladle into cartons or jars, filling to within a 1/2 inch of the top. Cover with a cloth and let stand until set, 24 hours or overnight. Cover and freeze.
  3. To serve, thaw and store in refrigerator. (Freeze for 1 month before thawing to use).
