Caramelized Peach Tarte Tatin

Caramelized Peach Tarte Tatin


4 Peaches

250 mL (1 cup) Sugar

15 mL (1 tbsp) Water

15 mL (1 tbsp) White Corn Syrup

225 g (½ lb) Store Bought Puff Pastry Dough

500 mL (2 cups) Cream

60 mL (¼ cup) Icing Sugar

5 mL (1 tsp) Vanilla

Cooking Instruction

Preheat oven to 200°C (400°F). Blanch peaches, peel and cut in half. In a small saucepan, bring sugar, water and corn syrup to a boil; simmer over medium heat until a golden caramel forms (about 5 minutes). Pour caramel into a 20 cm (8 inch) ovenproof frying pan. Arrange peaches cut-side up on caramel. Roll out dough into a 20 cm (8 inch) circle. Place over peaches. Bake for about 30 minutes until golden. Cool slightly. Whip cream with icing sugar and vanilla. Cover pie with a serving plate and flip upside down. Serve with whipped cream.
