Peach Basil Bruschetta

This quick and easy appetizer is bursting with the flavours and colours of summer. You can prepare the peach and tomato mixture ahead of time and let it rest in the refrigerator for a day. The flavours will only enhance. Enjoy this bruschetta on a hot summer day, as an appetizer, along with a cool drink and your family or guests will be sure to enjoy.

Ingredients

  • 2 medium-sized ripe peaches
  • 1 medium-sized yellow tomato (2 medium sized red tomatoes may be substituted)
  • 1 medium-sized orange tomato
  • 6 large basil leaves, finely chopped
  • 1/2 clove garlic, minced
  • 1/4 cup feta cheese, crumbled
  • 1 tsp. olive oil
  • Pinch of salt
  • Pinch of black pepper
  • 1 French baguette loaf
  • Olive oil for brushing

Instructions

  1. Finely dice the peaches and tomatoes and place in a mixing bowl. Add the chopped basil, minced garlic, feta cheese, salt, pepper and olive oil. Toss until all ingredients are well combined. Place in refrigerator for half an hour to an hour.
  2. Heat oven to 350° F (180° C). Slice French baguette diagonally. Brush both sides with olive oil and place on baking tray. Place in oven for 5 to 7 minutes until toasted. Remove from oven.
  3. Spoon about 1 to 2 tablespoons of the bruschetta mixture on each slice of bread. Place on serving tray and serve. If desired, garnish with a touch of crumbled feta cheese or a basil leaf.
